Biofilm formation in the dairy sector: A food safety issue

As part of a project supported by Novalait, the Journal of Dairy Science has published a special issue dedicated to dairy biofilms, edited by guest editors Denis Roy (Université Laval) and Mérilie Gagnon (ACER Centre).

This issue features five articles that explore in depth these microbial communities, which can appear at every stage of dairy product processing, from milk collection to waste treatment. These biofilms, capable of adhering to surfaces in milking equipment and processing plants, pose a critical challenge to food quality and safety, as well as to consumer confidence.

The researchers detail the formation mechanisms and structure of biofilms and present a range of investigative methods, from laboratory experiments to field studies. Particular attention is given to new control strategies, notably natural and sustainable approaches. Among these, the use of biocides derived from plants or other ecological sources appears to be a promising alternative to the intensive use of antibiotics and chemical disinfectants.

In summary, this report offers an integrated perspective on biofilms: better understanding their development, identifying current gaps in research, and proposing innovative solutions to protect milk quality and support the competitiveness of the dairy industry.
