Award-Winning Paper on Yogurt

Valérie Guénard-Lampron, Ph.D. student and her collaborators have drawn the attention of the editor-in-chief of the prestigious Journal of Dairy Science. Their article won the Editor’s Choice, which selects the articles for their contribution to dairy science, specifically in the areas of dairy foods and dairy production.

Dr. Guénard-Lampron’s research director is the researcher Sylvie Turgeon of Laval University who did the project, supported by Novalait, in collaboration with Daniel St-Gelais and Sébastien Villeneuve of Agriculture and Agri-Food Canada.

The article titled: Individual and sequential effects of stirring, smoothing, and cooling on the rheological properties of nonfat yogurts stirred with a technical scale unit is available here in open access.
